HISTORY
In the past, almost every family owned cows for their own sustenance. Since the fresh milk produced by a single family was scarce, the need arose to join forces and process the small amounts of milk from small farmers. Thus, the first community dairies were born.
The cooperative system allowed farmers to produce more efficiently, improve the quality of cheese and butter, and also facilitated their marketing.
APPEARANCE
Cylindrical in shape, with a thin, elastic, light-colored rind. The paste is semi-hard yet tender and compact on the palate, pale straw-white in color, with scattered and irregular eyes.
It offers the aromatic flavor of the first mountain milk, with a production process that gives it a delicately intense character.
USE
Ideal for cheese boards and salads. This magnificent cheese can also be enjoyed as part of appetizers, breakfasts, or cheese platters. When grated, it is perfect for enhancing cooked dishes such as omelets or crepes.
Pairs beautifully with red wines from the region that reflect the character of the local terroir.
