Serrano Cordobés is a new exclusive variety from TAMBO DE DON SANTIAGO.

Our cheesemaking family has developed gourmet cheeses inspired by Italian tradition, yet deeply rooted in Argentine culture. Córdoba — birthplace of our company — is known for its mountain landscapes, crystal-clear rivers, and cheerful, witty people.

This cheese was created as a tribute to that Cordobés spirit, bringing a hint of freshness and originality through the addition of peperina, a native mint-like herb from the Córdoba hills.

It’s the perfect cheese for those who dare to enjoy a touch of Cordobés rebellion, wrapped in a unique balance of texture and flavor.

APPEARANCE

Shaped like a Canastrato and weighing around 1.5 kg, this cheese has a smooth, delicate appearance. The addition of peperina provides a refreshing menthol aroma, while its 60-day aging enhances complexity and makes it an excellent choice for tastings with wines or beers.
