HISTORY
Zolino is an exclusive creation of Tambo Don Santiago, developed by our master cheesemaker. This unique cheese is the result of the artistic and culinary talent of Franco Fubini, combined with experimentation and sensory tasting, until achieving a perfect and distinctive balance of texture, aroma, flavor, and character.
This product requires special attention, as its main feature is the incorporation of Penicillium Roqueforti mold, applied manually through spray techniques two to three times per week. This process gives Zolino its unique personality, redefining the concept of semi-hard cheeses with an innovative twist.
APPEARANCE
Zolino comes in a canestrato-style form weighing about 1.5 kg. It has a rustic, mold-covered surface due to the development of Penicillium Roqueforti. The mold is added manually using sprayers and a saline solution several times a week. Its color ranges from white to pale yellow, and its flavor evolves over time, beginning delicate and slightly sweet, then developing into notes reminiscent of seasonal fruits.
USE
Zolino is excellent for cheese boards, salads with nuts, or as an ingredient in fresh sandwiches. Its complexity and unique aroma make it a cheese for true connoisseurs.
