HISTORY
Formaggio di Fubini is a cheese created as a tribute to Don Franco, a true-born Italian whom we met at a gathering and who soon became part of our team.
He joined our family, and together we began developing the gourmet cheeses we proudly present today. With Don Franco, we sought to innovate by creating Italian-inspired cheeses with Argentine tradition. The result was this unique cheese with pieces of candied orange, offering a pronounced yet balanced flavor.
We are proud to name this cheese after him. Though Franco is no longer with us, his legacy remains alive in every piece.
APPEARANCE
This cheese contains small pieces of candied orange. Its texture is semi-soft, spongy, melting, and moist, enveloping the palate with richness. It has a fresh, lactic aroma with light acidity, and on the palate it develops into a pleasant, slightly bitter finish that balances perfectly with the sweetness of the candied orange.
USE
Ideal for serving with toasted bread, walnut and raisin bread, or black olive bread. It pairs beautifully with sweet berry jams (strawberry, raspberry, blackberry), honey, anchovies, or tangy preserves.
Best enjoyed with fresh, young white wines, especially Sauvignon Blanc.
